It is so cold!!!!!!!

I can not complain about Melbourne winters anymore.  You can not go outside when it is -15* for a walk.  It is crazy!  You can but I won't.  According to Fitbit I got about 1000 steps all day yesterday.

Let's see how I go.

Challenges - tonight I have dinner in greek town.  This is awesome because I don't like Greek desserts.  I'll have chicken and pita.  Very happy with that.
Tomorrow....Blackhawks game.  Hmmmm.
I think we will go out to dinner instead of eating at the stadium so that should provide some good choices.  I am not going to drink so I have to think about what I want to do about that.

Sunday Weigh In

Per usual, if I go to fat camp....I will average a weight loss of 5 pounds per week.  This was a short week for me.  I weighed in Monday morning and Friday morning and I am happy to report that I lost 4.9 pounds!  This puts me at 250.2.

So, my goal over the next two weeks and during the holidays is to lose .3 pounds!  This means I go back to fat camp in the 240s and POSSIBLY leave for Australia in the 230s.  I would be out of my freakin mind!!!!!!

Last night I made xmas cookies with the girls.  I had one.  In the past, this would have been a half dozen.

Very happy with my week.

the BEST pizza I have EVER had

I have raved about the pizza here in the past but tonights...it was unbelievable!  I would eat this over ANY pizza anywhere.

Steak pizza with kalamata olives and a drizzle of pesto.  DELICIOUS!
I can't stop thinking about it.
I wish we had Udi's crusts in Australia.  I would make this every week.  Every night!

I am hopefully getting the pesto recipe as it is good and it is much lower in calories as he uses pumpkin seeds instead of pinenuts and water replaces most of the oil (but not all).

On a completely separate note, I treated myself to a 0 calorie Decaf coffee at Starbucks tonight.  I got the paper and just relaxed away from the fat camp.  Doesn't the Starbucks server come up to me and say... "Happy Ugly Sweater Day!" and give me a FREE ugly sweater COOKIE!!!!!  It looked yumm-o. SERIOUSLY!?!?!?!?!?!?  So, I accepted it with a smile and on my way out, threw it in the garbage.

Salad in a Jar

Unfortunately, the classes are quite as good as they use to be.  But I am still attending and hoping to get one or two nuggets out of each class.  Last night's class is an excellent example.

The food expert did a demo and she showed us salads in a jar.  I have to say...it was pretty brilliant.

The idea is to make your lunches or breakfast ahead of time so you always have meals ready.  But the salad in a jar is brilliant.  So here is one example - tacos.

You spend all that time chopping up different veggies and there is ALWAYS bits left over at the end that gets thrown away.  Grab a mason jar, put the dressing first.  (She whipped together lime juice, avocado and a little oil - I would be happy with salsa.)  Then the meat or beans.  Then the wet veggies (peppers, carrots capsicum)  Then the dry veggies (cilantro) and then the lettuce.  It stores for over a week.

But you could do it with any leftovers.  A Chinese salad with leftover stirfry.
Steak or lamb salad with leftovers.
It doesn't need to be leftovers btw but everything is already cleaned and chopped which is great.

The little jar on the right was BRILLANT!  It was sushi in a jar.
She crumbled seaweed on the bottom then soy.
Then put in brown rice, crab meat, avo, then did the layers all over again.  YUM!!!!!

The jar on the right was pumpkin bircher.  I would be happier with normal bircher! :)

I am trying to remember to take pics of all of my food

Yesterday we talked about how using a diary is the absolute best way to ensure you stay on your program.  One of the new ways of doing this is to take pics of your food.  I try to remember but I just start eating before I take the pic!!!!

Here are a few examples - note how they use little plates to make everything look big!  I am going to start eating on salad plates.

As always I start my morning with a chocolate, peanut butter and banana smoothie.  Delicious.  I actually think the one I make is better - I have now perfected it!

You get a vegetable soup before each lunch.  Today was cream of broccoli and it was absolutely delicious.  I could have just had that.  Yum.  We also had green chicken curry but I ate it before I took a picture. :)

Last night's dinner was a turkey rueben.  I discovered these a few years a go at fat camp.  I am very big on this as it has sauerkraut which everyone is saying is so good for your gut health.  I think I need to incorporate this in once a week into my diet.

Food for thought

In our class today, the instructor pointed out that 200 extra calories per day is 20 pounds per year.

200*365=73,000 calories
73000/3500= 20.85 pounds

That goes either way.  If a person were to keep everything the same but give up pop, they will lose weight. Finding 200 calories out of your diet is difficult.

It goes the other way as well.  Just adding in an extra piece of great bread OR a healthy serving of wine is an extra 20 pounds on your bum!

Grrrrrr.......

What was day one like?

So much was the same but there were a few changes as well.

Firstly, the morning hike has been pushed out a bit, so you get up for brekkie and then do a stretch class and then hike. Kind of odd?

Yes, I have the same breakfast I ALWAYS do.  The chocolate peanut butter and banana smoothie.  It is delicious.  The full breakfast options are:

 - eggs and toast
 - egg scramble
 - peanut butter and toast
 - granola and protein
 - oatmeal and protein
 - my smoothie

And they always start with a small side plate of fruit.

Lunch was a bit average.  It was grilled chicken breast, cous cous and green beans.  It was ok.  But tonight...chocolate covered strawberries!  I can't wait!

The full calorie count for today is 1229 plus snacks.

The hike was a little different as well.  They have a new person in charge and they do stop sign for the assessment.  I still drove over myself as I wasn't sure how my knee would go.  The hike was good and the knee is ok.  I have iced once and I will ice again after dinner.

The weather is PHENOMENAL!!!!  I was in a tshirt today - it is lovely.
I didn't sleep well last night so I am looking foward to some quality zzzzzzzzs.

Day one...almost done.

Sunday Weigh In

It is really surreal to be back here in Utah at the original fat camp. I am both extremely proud of myself for getting back here and stopping the weight slide I was on and...incredibly depressed for getting back into the 250s.  I know I keep saying that I can't believe I was gaining this weight but I really can't believe I was gaining this weight!

I am only here for one week before the holidays.  But back after new years for another two weeks.

I weighed in at a very sad 255.1 pounds.
The last time I was here I weighed 219.6.

Oh well, I am back to it and that is the good news.
