Salad in a Jar

Unfortunately, the classes are quite as good as they use to be.  But I am still attending and hoping to get one or two nuggets out of each class.  Last night's class is an excellent example.

The food expert did a demo and she showed us salads in a jar.  I have to say...it was pretty brilliant.

The idea is to make your lunches or breakfast ahead of time so you always have meals ready.  But the salad in a jar is brilliant.  So here is one example - tacos.


You spend all that time chopping up different veggies and there is ALWAYS bits left over at the end that gets thrown away.  Grab a mason jar, put the dressing first.  (She whipped together lime juice, avocado and a little oil - I would be happy with salsa.)  Then the meat or beans.  Then the wet veggies (peppers, carrots capsicum)  Then the dry veggies (cilantro) and then the lettuce.  It stores for over a week.




But you could do it with any leftovers.  A Chinese salad with leftover stirfry.
Steak or lamb salad with leftovers.
It doesn't need to be leftovers btw but everything is already cleaned and chopped which is great.

The little jar on the right was BRILLANT!  It was sushi in a jar.
She crumbled seaweed on the bottom then soy.
Then put in brown rice, crab meat, avo, then did the layers all over again.  YUM!!!!!

The jar on the right was pumpkin bircher.  I would be happier with normal bircher! :)
